And I’m very excited for some new summer recipes! I’m in a meal planning rut…
I feel you on a meal planning rut! When I get here, especially as seasons change, I'm not necessarily looking for different recipes but how to make the same thing with in a slightly different way. Like tacos for instance, maybe you add a mango salsa or do a grilled chicken taco instead of ground beef. You add a different element to your normal but it's known enough you'll keep making it but different enough to excite you. Sometimes the best excitement is the extra, like topping your burger with a new sauce or fresh tomatoes and lettuce, putting a new spin on guac, adding pesto to roasted potatoes, etc.
I can't even say I'm in a meal planning rut ... I just need a meal planning system that I can follow. I'm SO TIRED of my husband's "so what are we having for dinner?" at around 4PM when he has zero input earlier in the day ... it's like meals miraculously appear from the kitchen ... then I get annoyed and don't want to fix anything. So any planning tips would be welcomed.
Man, isn't this a hard truth for so many of us! My kids tend to do the same thing. I try to lay out three meals each week that I know I'm going to cook, buy the ingredients and then I don't have to think about it. The other days I fill in with leftovers or something really easy but not cook. I will try to do a post about meal planning because I have a feeling you're not alone!
I do the same ... but then 4PM rolls around and I don't "feel" like cooking what I've planned or George isn't hungry or ... name that excuse. I've looked at "freezer meals" and "OAMC" because prepping in the morning when my energy is higher might be a better plan for success? Look forward to anything you or your readers might offer ... especially in the summer when getting the oven on and heating the kitchen is the last thing anyone wants.
So excited about this challenge. Just what I needed to ignite action and hold myself accountable. Spending time thinking through the workbook was empowering. I feel confident that this is possible. Thanks Alexa!
